For tartar:
Ingredients:
* Fresh salmon fillet 200 g
* Tasmanian sea salt 1 tsp
* Smoked sugar 1 tsp
* Isot chilli pepper 1 tsp
* Tahini 2 tbsp
* Lemon 1/2 pc
* Black and white sesame 2 tbsp
* Green onions for garnish
Directions:
Cut salmon into small cubes, add tahini, salt, chili and smoked sugar. Finish with lemon juice and toasted sesame seeds.
For rice chips:
Ingredients:
* Rice paper 5 sheets
* Crystal pink salt 1 tsp
* Oil 1 glass
Directions:
Cut paper into square shape.
Heat oil and fry. Season with crystals of pink salt. To assemble put salmon on the top of rice chips. Garnish with green onions and serve immediately to keep the crunchiness !
